Opaque in color, almost black, in very aromatic and complex nose of ripe fruits, blackberries, currant, licorice and spices. To the palate it presents / displays with great body and structured, well balanced, where the ripe fruit is present present, a slight tonality the wood with certain roasting, to take us to a firm and enchanting finish. Of vineyards with a seniority between 12-15 years of Granite soils, vines are pruned to give two clusters every 12 cm.
Harvested by hand, once in the cellar they are destemmed and crushed and the resulting juice is introduced in stainless steel tanks to start the fermentation at 27º for 6 days with reassembling 5 times a day. After soft pressing and malolactic fermentation, the wine is left aging for 18 months in French oak barrels of which 40% are new barrels and the rest of the old barrels.
This wine needs strong and fatty dishes, fabada, cooked or red meat with sauce will be where best expressed.
