Los viñedos se orientan al sol y se obtienen unos rendimientos de entre 7500 y 8500 kgrs/ha muy por debajo de los 13.000 kgrs permitidos por el Consejo Regulador. Esta orientación del viñedo y el trabajo de campo hacen que se consigan unos 13,5 grados de alcohol, algo casi impensable en esta zona que generalmente ha sido penalizada por su excesiva acidez, en los vinos de Itsasmendi destaca una acidez fresca muy sensacional, pero esos niveles de alcohol hace que se equilibre y sea realmente agradable disfrutar de ellos!!.
